Greek Summer Salad

This delicious summer salad is a unique take on a classic Caprese salad, but it features Greek Feta cheese and Greek Basil instead of fresh Mozzarella Cheese and Genovese Basil. Enjoy it when the tomatoes first ripen and when it's too hot to cook.



A handful of cherry or plum tomatoes, halved or quartered.
A handful of Feta Cheese, cubed or crumbled
A sprinkling of Greek Basil leaves
Sea salt and freshly-ground black pepper to taste.



Combine ingredients in a bowl in a pleasing composition and enjoy!
This salad is very versatile and can be adapted to whatever you have on hand. Add zucchini or onion to the mix, a drizzle of olive oil and balsamic vinegar or a sprinkling of your favorite spice mix. The salad pictured was topped with Tony Chachere's Creole Seasoning for a surprisingly delicious Greek/Creole fusion.
